      <title><![CDATA[Balletto 2008 Pinot Noir]]></title>

Brix at Harvest: 23.9 to 25.8
Clones: This Pinot was created from 14 different clones of Pinot Noir. Each lot was fermented separately in 6-ton open-top tanks, barrel aged and then blended in April 2009. The clones included: Swan, 667, 777, 115, 113, 9, 32, 15, 37 and 23 and each clone contributed slightly different characteristics to the final blend.
Vineyard: The grapes for this vintage came from the main vineyard on Occidental Road in Santa Rosa, our Burnside Vineyards west of Sebastopol and BCD Vineyard on Guerneville Road. 
Soil: Balletto has several soils on which their grapes are grown. They are Wright Loam Shallow, Clear Lake Clay, Blucher Fine Sandy Loam and Goldridge. 
Other Information: This wine was barrel aged for 10 months in French oak, 30% of which was new.

Hand-harvested and fermented in four-ton open top fermentors with two daily pump overs. Aged in primarily Nadalie and Radeaux coopered new and neutral French and American oak barrels for 26 months.<br>
Soil profile: Unusually deep hillside topsoil consisting of alluvial and volcanic composite allows the vines a slow, even rate of maturity despite the warm, western exposure.

From the Alexander Valley:
<b>Stuhlmuller Vineyards 2007 Estate Chardonnay</b>
This wine displays a pale gold color with green reflections. Aromas of pineapple, sweet white corn and spicy Asian pear combine with notes of fresh nuts, barrel spice and hints of ginger. On the palate it balances medium acidity with integrated oak and a lush texture revealing layers of pineapple, pear, lemon cream pie, honeysuckle and spice.
Vineyards:
Stuhlmuller Vineyards is located at the southern edge of the Alexander Valley, where it converges with two other highly regarded Sonoma County appellations, Chalk Hill and the Russian River Valley. On its eastern edge, the 150-acre vineyard borders the Russian River. Situated in a unique location that is part river benchlands and part hillside, the vineyard benefits from its alluvial gravel soils and the more rocky soils that comprise the hillside sections of the vineyard.

The grapes were picked the last week of September and lots were fermented separately in stainless steel tanks. The cellar crew performs three pumpovers per day-this process adds softness and extracts color and flavor from the skins. Following fermentation, the wine was aged in American oak barrels for 12 months.

Located on the valley floor in the Dry Creek Valley, this particular block produces wines of great character and fruit intensity. The grapes were harvested at first light to capture the bright fruit and crisp acidity, and that shines through in the resulting wine.

Tangy sour cherry, baked blueberries, fresh blackberries, savory roasted meat, sage and black tea. Nice tannins, to match the pretty fruit and high acid. Should age very well. Long tasty finish.

Although the label reads Thorn Road, this 2006 wine is made from the Klopp family's Thorn Ridge Ranch. Prior to bottling there were unresolved trademark issues surrounding the name, so they went with Thorn Road. These have now been resolved and once again they will be able to refer to this lovely vineyard by its proper name. Farmed by Ted Klopp with sustainable practices, it is located high in the Sebastopol Hills, in an area which had previously been designated Sonoma Coast, but is now part of the expanded Russian River Valley appellation. The character of the fruit is neither typical Russian River nor typical Sonoma Coast. The deep dark berry profile is the result of the steep east facing aspect high above the fog line and the goldridge soils. The clones are Pommard, Swan, 667 and 777 and are from the upper and lower parts of the ranch.

Production Notes
Harvest of both the upper and lower ranch took place on September 25, 2006, in what has come to be known as "Operation Firefly". Ted Klopp and his picking team arrived at the vineyard at 2am; the pickers donned headlamps and began to harvest to take advantage of the cool temperatures. The higher elevation of the Thorn Ranch means that there is no fog layer to keep it cool in the morning, so as soon as the sun rises, it begins to warm up. Sadly, because of the night pick, not as much of the Botrytis rot was cut out as might have been the case in the day which lead to serious triage at the winery. Nevertheless, looking across the vineyard that morning was like looking at a swarm of fireflies buzzing in the vineyard. By 5:30 am, this was the view from the vineyard as we were loading the trucks for the winery. Amazing!

Winemaker Notes
The fruit was destemmed and fermented in open-top 5-ton stainless steel tanks. Because of Botrytis, the wine was not cold soaked and the must was adjusted with acidulated water to reduce the effects of the Botrytis (which rasied the sugar in excess of 30 degrees BRIX in the fermenter) and ease the fermentation. The wine was pressed off when dry and aged in a combination of new, one year and two year old French barrels: about 50% was new. The wine was blended to tank in February 2007 and then returned barrel, to finish the 11 month elevage. The wines were kept on their lees, even after blending, and stirred weekly between October and February. The wines were filtered by crossflow and bottled on August 21, 2007.

In blending this wine four different lots of Chardonnay were used, each bringing something distinctive to the blend. Hand harvested in the chill of early morning, the Chardonnay is gently pressed as whole clusters. The juice slowly ferments in stainless steel tanks at 62 to 65 degrees farenheit, retaining the bright aromas and flavors in the wine.

At Iron Horse "Estate Bottled" means that the winemaking begins in the vineyard. Their location in Green Valley represents the very best soil, climate and aspects for Chardonnay and Pinot Noir. The goal is to grow the best winegrapes that should be growing through what Iron Horse calls "precision winegrowing." All pruning, canopy management, irrigation and cover crop decisions are determined on a block-by-block (and sometimes even vine-by-vine) basis, considering both the vintage at hand and the long-term needs of the land.

<b>Hawley 2006 Chardonnay</b>
This wine was whole-cluster pressed, to minimize tannin, and fermented in 25% new French oak barrels. Barrel fermentation and sur lee aging adds a velvety mouth-feel and toasty notes. 100% malolactic fermentation softens the high natural acidity of the grapes and adds a buttery complexity.

At Hawley Wines they follow traditional French winemaking techniques, including barrel fermentation and secondary malolactic fermentation. Barrel fermentation adds body and a creamy mouth feel to the wine while malolactic fermentation reduces the natural high acidity in the grape, and adds a buttery complexity. Some vintners choose to ferment their Chardonnay in stainless steel tanks, claiming that it helps preserve the natural fruit flavors of the grape, but French wine making entails taking this natural product and interacting it with more than the original fruit.

In 1980, founding Winemaker John Hawley set the standard for a new kind of California Chardonnay at fledgling Clos du Bois Wines, barrel-fermenting fruit in a traditional French style that was virtually unknown in California at the time. Industry mavens who didn't believe this upstart approach would be relevant missed the boat-within 5 years half of the area's Chardonnay was made using oak barrels, and by 1996, his last year at Kendall-Jackson, John supervised the production of 2.4 million cases using this method. Emily's Cuvee is produced from a vineyard site farmed by Jim Ledbetter (Vino Farms), near the banks of the Russian River. This primary vineyard, the home ranch for Vino Farms, is located on a well drained, gravelly site less than one mile from the Russian River - the "middle reach" of the appellation. This vineyard experiences the full impact of cooling fog which travels up the rivers banks. Fruit is harvested in the cool morning hours and transported to the winery on Starr Road (minutes away) for destemming into small, two-ton custom designed fermenting tanks. A portion of juice is fermented using pure strain yeast while the balance ferments spontaneously with wild (indigenous) yeast. During fermentation, the cap was punched down by hand several times each day to gently extract the grapes flavors and aromas.

<b>Schramsberg 2006 Blanc de Noirs</b>
Made primarily from the red grape Pinot Noir, this is a complex, medium-bodied, brut sparkling wine. Schramsberg pioneered the Blanc de Noirs style in the United States, releasing the first such American sparkler in 1967. The key to producing this complex Blanc de Noirs is our vast and varied focus on diverse cool-climate vineyards. Pinot Noir from Carneros and Anderson Valley combine with fruit from low-yielding Sonoma and Marin coastal vineyards to develop a sparkling wine with a breadth of fruitful aroma and flavor. Select Chardonnay lots give zest and backbone to the blend.

Making a white wine from a red grape requires great care hand-picked fruit, early morning harvest, optimal fruit maturity and delicate pressing. A balance of bright flavors, crisp acidity and minimal tannins is achieved. Barrel and malolactic fermentation of particular wine lots add richness and body. Yeast contact in the bottle harmonizes all the elements together in a mature, toasty style. The youthful fruit character of the wine will develop and soften with additional age in the bottle. With proper storage, this sparkling wine will be delicious for many years, even a couple of decades to come. Schramsberg Blanc de Noirs is particularly well-suited to serve with a variety of foods, including soft and nutty cheeses, macadamia nut-crusted halibut, and pork tenderloin with fresh rosemary and lemon thyme.

It is dry and spicy, deeply colored, with almost aggressive tannins offset by delicate flowery aromas and a touch of cinnamon and nutmeg from the French oak.
This single vineyard Merlot comes from the same few acres on the northern edge of their Red Winery Road Vineyard as the popular 2003 vintage. It was given a twenty-one day extended maceration and was aged for eighteen months in 40 percent new French oak, then blended a bit of Cabernet Sauvignon from the same vineyard. This wine is even more atypical of California Merlot than was the 2002 and 2003.

<b>Unti 2006 Grenache</b>
VARIETAL & VINEYARD: This Southern Rhone-style wine is 77% Grenache, 17% Syrah and 6% Mourvedre from the creekside vineyards planted in 1998. The primary component of this blend comes from a 2.9 acre block, planted to three clones of Grenache Noir. We obtained the bud-wood from Tablas Creek and Alban Vineyards. These clones, selected from Chateauneuf-du-Pape, give darker color and better structure than the majority of Grenache planted in California. The Syrah used in this blend comes from Northern Rhone clones (174, 877, 383 and 470) while the Mourvedre (bud-wood also from Tablas Creek) comes from three rows planted alongside the Grenache. Our vines are planted on low-vigor rootstock to 4'x 6' spacing.

The clones included: Swan, 667, 777, 113, 9, 32, 15, 37 and 23 and each clone contributed slightly different characteristics to the final blend.
Vineyard: The grapes for this vintage came from our main vineyard on Occidental Road in Santa Rosa and our Burnside Vineyards west of Sebastopol.
Soil: We have three different soil types on which our Occidential grapes are grown. They are Wright Loam Shallow, Clear Lake Clay and Blucher Fine Sandy Loam. The soils at our Burnside Vineyard are predominately Goldridge soil.
Other Information: This wine was barrel aged for 10 months in French oak, 30% of which was new.

This area is a particularly good one in the lower Rhone valley. The wines are known for their fruit and typical aromas. Generally they are full bodied and balanced. Techniques such as saignee and long macerations are used to give the wines more color and structure.
Saignee (France)
This winemaking process involves bleeding off a portion of red wine after only a short period of contact of the juice with the grape skins. Because the colour of red wine is derived from pigments in the skins, the juice is only pink not red. This process is how rose wines are made, the only exception being Champagne where rose may also be made by blending red and white wines, although some think the best wines are made by the saignee method. The process may also be used to improve the quality of red wines, as it increases the ratio of skins to juice in the vat, so a more deeply coloured wine may be obtained.

The magnificent stubby gnarled vines are living testament to the unique combination of this old clone from the late 1800's grafted upon St. George rootstock. Carefully hand picked fruit combining low yields produce intense bright briary flavors of mixed berry and cherry combined with spice. Extraction is by hand punch down in open stainless fermenters to provide a bold wine with excellent color, structure and well integrated tannins. Aged 20 months in 33% new American oak and lightly filtered prior to bottling.

A small proportion of Sauvignon Blanc undergoes a short `maceration pelliculaire` which adds an attractive depth to the white wines.

This trellis system opens the fruit to ideal sunlight exposure and allows for uniform ripening.  This whole-berry ripening helps alleviate the vegetal character sometimes found in Sauvignon Blanc.  The grapes were hand picked, whole berry pressed, fermented in stainless steel and aged for 12+ months.  Some of the wine was aged in French oak barrels and blended with the non-oaked wine before bottling.  Bottled on March 23, 2007 and bottle aged for 6 months before release.

The wines were made separately and aged for 15 months before blending and then aged for an additonal 6 months as a blend before bottling. A mixture of French and American barrels were used throughout the aging. Coyote Crest's wines are bottled unfiltered and unfined to insure all the flavors remain with the wine. The fruity Merlot is greatly influenced by the softness of the Cabernet.

The must was inoculated with Pasteur Red yeast and fermented in small tanks specially designed for greater skin to juice contact. The wines were tasted daily to determine the best time for a gentle press. The wine was then aged in French Oak barrels (67% new and 33% one year old) for 21 months. The final blend was made by adding 2% Petit Verdot and just 1% Merlot, adding the final harmonics to a beautiful symphony. This elegant wine can be enjoyed now and will benefit from the accompaniment of full flavoured foods or a nice juicy steak. This wine will also develop with cellar ageing as the fruit, acid and tannins perform their intricate dance through time.
